  Twenty-four solar term: "The first month festival, the establishment, the beginning is also …". The ancient "four stands" refers to the beginning of spring, summer, autumn and winter, and its agricultural meaning is "planting in spring, growing in summer, harvesting in autumn and storing in winter", which summarizes the whole process of the relationship between agricultural production and climate. Because it is the beginning of spring, people all regard beginning of spring as a festival. During the Tang and Song Dynasties, beginning of spring became more and more popular in eating spring cakes, and the emperor gave them to his officials. At that time, the spring cakes were very particular: "Cuilv red silk, golden rooster and jade swallow, extremely exquisite preparation, each dish was worth ten thousand yuan." People also use it to give gifts to each other.

  Today, the shape of spring cakes varies from place to place, and the eating time varies from place to place. There are baking and steaming; As big as a round fan, or as small as a lotus root.
